2014 Jetta TDI Sedan did timing belt and water pump at 115,000m but didn't change the HPFP...

How worried should I be?
Should I schedule a replacement HPFP as soon as possible?
Roll the dice and just drive it?
Or, have I been reading too much in these forums about the evils of those stock HPFPs?

Reading too much IMO. If you've been consistent @ 20k fuel filters and run known good diesel, your14 should be good. My 04 b5.5 was running perfectly @170k w,hen I sold it. i add lubrcidity additive every other fill up on my 11 JSW. Seems I've read about as many "oh crap I damaged my engine" threads from diy pump conversions.

I have upgrade both my TDI's to CP3 fuel pumps from Whitbread. MPG improved by 3mpg, more power and I think the engines run smoother, but best of all no grenade of a cp4.

What kind of all in cost for the conversion?

The Whitbread CP3 kit costs $795 and that includes the complete adapter kit and remanufactured pump. For installation you will need a 6mm pipe bender, some triple square bits, a 90 degree T30 wrench and a torque wrench. The guide by 2micron is pretty good but depending on your model you may need to remove the 3 screws on the EGR-anti-shudder valve to be able to easily mount the new pump. Of course you will need to prime the fuel system before the first start and you may want to consider adding or updating a tune to maximize the performance.
