2001 golf AC on slowly ices up evaporator.
Quick question would the Left rad fan be part of the cause?
Just checked when I noticed weak air flow out the vents.
Seems to drain through the condensate line ok.

Sounds like it can be one of a few issues. 1# your txv (ref.feed device) malfunction 2#Lack of air flow due to a plugged coil, fan clogged with foam practicals. 3# low charge.
Don't have a lot of VW specific Ac experience however these are typical issues that one may have with those kinds of conditions.....

Schoust is pretty much on the money. ACs work in a very specific way... and he covered the general causes of issues. These are basically the same for home central AC units, too. You need enough refrigerant and it to be moving properly and you need enough air flow to keep it from freezing. If it freezes up, it isn't a good thing, either, because that can cause a refrigerant leak, in and of itself.

If you can feel cool air before it freezes up, you could try cycling the AC on and off while leaving the blower fan operating. This will keep it from freezing up. Check to make sure it is free of obstruction and that the fan is fully operational and that you are full on refrigerant.
