Yeah, no way to trim the data itself. Thats why I had to use a mechanical boost gauge, the ECM only reports absolute pressure and I can't find any OBD-II thing that can display as gauge pressure.

Scanguage II can display boost pressure, but it uses a constant for atmospheric pressure. It's not smart enough to read the atmospheric sensor and calculate, but you can adjust the constant to account for altitude.

What's the normal operating oil temp for a CRUA engine? I have a '15 6sp TDi and sometimes see 228*F oil temp when running around 2000 RPM/~75mph and ambient temps in the mid to high 90's.

Normal operating temperatures for the 2.0 TDI oil is 215-285°F. I typically see 220-250 on my CKRA.
Synthetic oil is good for north of 300°F before it degrades.

This is exactly correct. Cluster gauge is intentionally "vauge". Unless you have a digital gauge (such as VCDS or Scan Gauge) hooked up or test the coolant in the recovery tank, you really don't know where the coolant temp is. Failed stats will still usually show "normal" 190 on the cluster gauge if they reach 165 range as Dan points out. Unless the "new" stat is aan OEM or some other quality part, it may not operate at the stated temp. I went thru that last year-new "generic" stat didn't get any warmer than the failed one. Test the new one to make sure you are getting up to temp, especially if you live where it gets cold.

my 2007 1.9 TDI polo after a 10-15 min run sits at about 75-80 on the cluster, I used an obd 2 scanner to check the coolant temp and it was 78 or so, the bottom hose is only like warm, it’s my first diesel, do they run cooler, take longer to warm

Yes, they typically take longer to warm up unless under load and when it's cold (under 0F) will lose coolant temp when at idle or low load. If you don't reach 190F\90C in 15 minutes at load and "warm" ambient temperature it's a safe bet the thermostat isn't working properly.
