Found the problem...
Well, congrats to all who were thinking it was the head gasket, because that's what it was...all the symptoms I was experiencing were related to the head gasket...but for me the fun doesn't stop there

When Marty (JeTAAH) took the head off he found the leak in the gasket, but he also found damage from the past that I didn't know about. His guess is that the timeing belt must have slipped a notch or something like that. He found bent valve rods. The valves were still sealing, so that's why I never noticed any loss of power or any other symptoms. It looks like the slip was most likely caused by a bad tensioner...the one that was on the car dates to 1999, so it was probably changed in 2000.
Anyway, when the car does come back it will have a brand new head (it cost the same to buy a new one than to refurbish the old one) and TB tensioner, so I'm planning on putting another 190k on it!
