What would the bolt pattern and offset be on a 00 01 4dr golf TDI? I think its the 5x100 but not sure. I'm away from home and can't look it up myself.

I'm figuring this is no longer a problem, but you are correct on the bolt pattern. The offset, hmmm, IIRC a range from 35-45 is about correct. I wouldn't go less than 35 (the tire might start rubbing on the struts), and more than 45 will start to put undue stress on the wheel bearings. Unless you really need tires that wide.
