Black sludge in transmission axle flange???

I am doing a clutch removal and reinstallation. This is the first time i am doing anything on a car besides changing a tire and replacing a battery. (I know, what better way to learn than to just jump right in.)
I researched for a few months before I actually dropped the transmission (as i didn't know how entirely); when i removed the axles i noticed extremely black "grease", not so much oily as it is just thick. I can't find anything that resembles what i found. It covers the entire inner cv joint and all inside the transmission flange. I noticed some removals online are completely bone dry wondering why mine is jam packed with black stuff. I can't find anything on with this outcome.

Is it just a giant problem I look forward to hearing about??

That grease is supposed to be there. As already stated repack the joint with grease and be sure to get the gasket on correctly.
