Quickest approach would be a scan with a VW-specific scanner... will narrow down which airbag, which will tell you where to look first.

The seat belt buckles are part of the airbag system, removing the center console may have disturbed something. Check under the seats and make sure the wire that comes from the seat belt buckle is still connected. It will be a yellow connector. Anything with a yellow connector is air bag related there will be more than one under each seat.

I only took out the shifter cover and the ashtray. Doubtful. I'll need to pull the codes i guess

This scanner is $20 and if you read the comments it works to reset the Airbag light. This one is out of Stock so search U281 OBD2 on Amazon and others will come up. Mine came on a whil4e ago I unplugged the light in the dash with the battery connected that was all it took VW sucks sometimes...
I would literally have this right now but in the last week or so Amazon turned into a damn mess. I had a big order and they shipped it in 7 packages. 3 made it to me. One of my orders was delivered to someone else, another order they gave me the wrong item, the 3rd package is still delayed after 7 days and lastly, the 4th package is now lost and they gave me a refund this morning and are telling me I will still get the package within 48 hrs....
Yeah, sure I will. So I'm pissed off! So in 48, I may have this, or I may not... Sorry, I wish I could help ya more.

So read the comments order if ya like the link for Amazon is below... I am still on the hunt for a better one tho...
