You should be able to read all three EGT’s in VCDS or your choice of software. My question would be do they make any sense (but maybe ecu doesn’t like the readings) or are they nonsense or nothing there.
The big bolt is moved relative to what? The bolt goes into the frame rail, if that is moved the car is done IMHO, but I doubt you could do that without first shearing the bolt. Come to think of it I wonder if the bolt is seriously bent and you might just be measuring how much.

I think your TPMS problem might be related to the ABS issue. I can’t remember which models/ years detect soft tire by different speed registered by ABS on that wheel. I’m happy to not have TPMS.
It’s easy to damage the wiring to a wheel sensor when changing struts, I’d start there.
I swapped bearings but I’m quite sure that was unnecessary. Gave me a chance to clean up the knuckles nicely though. I now have a spare set of bearings from a 2006 Passat with unknown mileage and abuse.
