For number 1, do a search for "Slowdown shudder". It has to do with the amount of fuel being injected and has to be changed with a laptop. This is most likely your issue. It is not harmful and is easy to fix. Good luck!

Just turning the car off and back on will take it out of limp mode. If it is the VNT actuator that is adjusted incorrectly, the low boost will trigger the limp mode to come on over and over again when boost is too low for a preset amount of time. That might be why it will pick up and go...
I think you're reading the horsepower number from one run and comparing it with the torque of a different run. There are two runs on that dyno sheet.

It works. I read somewhere that they installed nitrous and propane on this Golf TDI, but they didn't mention the propane. I don't know how else it could go so fast with just nitrous.
