I haven't heard of the car shutting off because it's not charging. The computer likely knows the battery voltage and will shut down when that gets too low. I know this because I drove on battery power until the computer shut down (everything else shut down too but the motor kept running)...

I found that it helps to crank the parking brake a whole bunch of times. I'm not sure the order matters though but I would crank the parking brake about 20-30 times before bleeding the system.

Check your local dealer. I almost bought one from idparts but the local dealer was actually significantly cheaper (for my 2002 though). And being brand new I didn't have to worry about getting the old bushings out.
FWIW, I ran a full size fridge and a deep freezer off a $500 Harbor Freight Predator 2000 inverter generator for about 40 hours a couple of years ago when we had some tornadoes. Actually I shut it off at night but it was enough to keep the food from spoiling.

I printed off all the instructions from one of the write ups and followed it step by step, page by page and it went smoothly. I wouldn't hesitate to do it as long as you have the proper tools. And I'm no pro either. It was my first timing belt.

This is not just a VW issue. I had issues with reman alternators in my old '97 Taurus SHO. The originals would last 80-100k miles and replacements were lucky to get 20k.
