I'm willing to bet with 99.9% accuracy your water pump has failed you.
heat brings the temps down because it turns on the AUX pump which moves fluid.... and cools the motor at the same time. VCDS will confirm this if you watch temps.
my "mexican" variant has a DEF tank that is unused as well, what a coincidence!
i will be finished soon with my conversion to accept diesel fuel and transfer to main tank.
the CVCA actually does not do well with any of the grills blocked. the complex cooling system would rather handle the cold on its own... in my experience.

there are differences between the CVCA and CRUA engines.. both of which are used in the MK7. that might be why some fit and some don't?
