Holy crap, it really gets hot..
1) Does this happen each time you drive it?
2) Does the coolant light get ON when this happens? Does the tremperature gauge needle move any further past the 90*C mark?
3) Does the coolant fan ever comes on? Can you check and confirm it working by activating output tests in Engine module? If you choose Sequential tests, one of them should be for the radiator fan
4) If you turn the cabin heat to 26 *C (or whatever highest temperature)m fan speed to MAX and roll all the windows down, does this help the case at least a bit?
5) After a drive, check the coolant hoses. Are they rock hard? (before doing that, either wear gloves or allow the car to cool down a bit to avoid burns)
6) Coolant expansion tank. When you slowly unscrew the cap, what happens? How much pressure is there? What happens on that moment with the coolant level?
7) Next time you do logging, you want to include vehicle speed which you missed this time. Also, it would be great if you could include more coolant temperatures, particularly G83 (if I'm not mistaken) which is coolant temperature at radiator outlet, sth like that.
Also, would be great if you could search the Measuring Values for V178 operation/status or anything related to that and also add to logging. V178 is an electric motor primary designed for EGR cooler but it also supposed to work on overheat conditions. Would be useful to see how it behaves. This is it:

In short, please review 1-6 questions and do one more logging as per #7
