Just follow the 5speed swap instructions. The wiring READS more complicated than it is to actually do. No tcu in a manual and no need to swap ecu's.

Can't I just switch to the standard Ecu out of the donor car I don't have access to vagcom
Buy the cable, and a laptop, if you don't have one.
Knowledge is power, and now YOU will have a better
understanding on what's going on with your car.
I certainly don't do all the work on my car, but I know
what to ask for, and half the battle with any problem is
diagnosis. Good mechanics appreciate this!

On a budget? Keep an eye on the classifieds for a cable, they come
up on a regular basis. Used laptops abound on Ebay for $100 that'll run VCDS.

Worth every penny, and you'll save heaps on any work you
either have done, or do yourself.

Cheers,

This VCDS cable should work on both your cars. It has unlimited VINs too. RossTech doesnt make it anymore and their new cables cost $200 and you can only use it on three cars. http://forums.tdiclub.com/showthread.php?t=482037

VCDS is a great investment that will easily pay for itself in short time.

You will open a whole new can of worms trying to switch ECU's.

You would have to deal with the immo, cluster and rfid chip just to mention a couple. One option if you want to swap ECU's would be to get an immo delete on the ECU you want to use.
