I’m removing cheap coilovers from my 03 jetta wagon and it looks like the lower spring seats get removed when installing coilovers. Do I really need the metal lower spring seat to install rear springs? I’ve looked all over the internet and can’t even find a picture of a rear spring seat installed on a car or if it’s even required. I’m installing Koni FSD’s with eibach springs if that makes a difference in your response.

Google search MK4 Jetta coilover youtube and the lower spring perch either stays or the kit you have replaces it. ECS tuning VW MKIV Coilover Replacement shows a different lower spring perch.

Are you going back to stock configuration (non-coil over)?

That seat or ring is sacrificial metal and is supposed to disintegrate in place of the spring or axle beam. The springs still rust and break here in the salty north.
