There's a lot of variation in dyno numbers, both because of the type of dyno and the operator. If Jon and Jeff did your work and tuning then you can be confident the car is set up and tuned well. The amount of smoke seems appropriate for PP520s and RC3.
I've had this setup on my car in the past and WHP/Torque on a more accurate dyno is probably in the 140/260 range. I don't know what LUK clutch you have but a '99.5 LUK will hold that power, it did in my Golf.
