Interesting concept, although very convoluted.
You have to buy an aftermarket Android-based head unit (many options available - just check out aliexpress or even Amazon) for as little as $100; add this dongle for $150, and boom - not just Apple CarPlay in your car, but WIRELESS CarPlay (I don't think VW offers that at all yet; very few car-makers / models do.)
And in an ironic twist, while you get wireless Apple CarPlay via your iPhone on your Android-based head unit, you only get wired (i.e., tethered by USB cable) Android Auto through your Android phone
A head unit swap isn't that tough in our Mk7 cars, but do note that if you have Fender Premium Audio, the fibre-optic MOST connection to the amplifier makes swapping in an aftermarket head unit all but un-doable.
