Should work just fine.

You absolutely cannot use a potentiometer pedal on a car originally equipped with a hall effect pedal. I ended up using one from an Audi in place of the floor mounted mk5 pedal on my CJAA swap.

You can use the Passat B4, Golf mk3 and ibiza potentiometer pedals and just hook them up to a normal throttle cable, just be aware that the ibiza pedals only use 5 wires and the VW's 6 wires, not really a big deal, number 5 pin is not used, engine runs fine with out it.
