2014 TDI Q7 Did they replace these as part of the fix? It's covered on my CPO warranty but just curious.

Here is what I know. My Passat had the emissions fix done and one week later the Nox sensor failed so I gather it wasn't part of the "fix" as such. Brought the car back to the dealer that installed the "fix" and they replaced it as part of the "fix" warranty. No problems ever since.

The Nox sensor was not replaced but it has always been a failure prone part of the Adblue system.

It's going to Audi for the free fix. Car drives fine but is it bad to drive with this sensor out of spec?

Nope. When I had a Touareg I drove it with a faulty Nox sensor for several months with no problems. I was awaiting buyback and had no pressing need to have the system worked on. However long it takes your dealer to get together to do the work should be fine.
