The break-in strategy that Niner mentioned is for the differential gears to mesh. Not sure what the Passats OM says, but my Suburban does say 500 no towing, then easy towing (not hard acceleration) for first 500 towing miles. Given the length of your trip and 500 miles on odometer, should be okay.
700 miles towing might be tough towing And, you'll not want to push it in the UP with your family. Sometimes long distances between fuel stations. I recommend topping off near Flint which seems to have generally lower fuel prices. You'll be able to judge by the time you OH how your running FE is and how far you can make it.
When are you traveling? I'm heading up I75 tomorrow, but I'll be happy with 9MPG towing an RV with the Burb. At least it's only about 170 miles.
