How does having too much oil in the crankcase cause damage to the catalytic converter, and how much overfill is "dangerous".

This is per the warning on the oil fill cap. I've never heard of oil overfill damaging a catalyst.

By burning off the excess oil it's blowing that thru the catalytic convertor and slowly killing it. One reason old cars that burn lots of oil will have trouble passing smog with a catalytic convertor that has been taking a beating from all the dirty air.
